Kevin the short answer is that the London Metropolitan Archive will hold these records. For what type of records they are (such as admissions) you could try looking at such sites as
http://www.nationalarchives.gov.uk/hospitalrecords

the Hospital Records Database (search under Hackney Hospital, which is what the Union Infirmary became)

http://www.workhouses.co.uk/

to find all manner of Workhouses and where their records are kept, and
www.cityoflondon.gov.uk/lma

the LMA site - select 'Family History' > 'London Generations Database' and try looking at (for instance) Hackney, using 'infirmary' as a search criteria.
