My grandfather was a commercial waterman, and I have wonderful memories
of our family spending the entire day on his boat, fishing & picnicing.
My mouth still waters for my grandmother's southern fried chicken. Our
picnic wouldn't have been complete without the tin of Charles Potato
Chips and the desert my grandmother called Peach Cake. It was actually a
one crust peach pie, and I can remember her lining the bottom crust with
peach halves, and then she would actually squish other peaches over the
top of this to make it good and juicy. I know that she would have a
flour, sugar & cinnamon mixture to sprinkle overtop, but I don't have
any recipe. It was not an ordinary pie crust, as it was rather sweet.
Does anyone out there have a recipe for this? I haven't had it since my
grandmother died in 1981 and I'd love to make one. Of course, we can't
get those delicious MD.peaches here in Illinois, but I could make a
trip there to get some!!!
I descend from the Elliott/Parks/Covington/Muir/Evans line of the
eastern shore of MD. Would really appreciate hearing from anyone from
Elliott's Island.
