I think I was trying to do too many things at once, and my previous note was a little disjointed.

I tried searching through NEHGS to see if I could find Joseph Peter. Since he was pretty consistent when specifying birth date, I focussed on that time frame (1881 - 1883). After trying to search by last name, I decided to try first name only leaving last name blank, and searching in the 3 towns that could potentially be Turner Falls. By 1882 I would expect the records to show up as Montague, but I also searched Deerfield and Greenfield. Nothing seemed at all likely as a Vanslet hit.

I searched through Census records to see if there were any clues, and I found the 1930 NY record where Joseph was married to Sophie (matched the WW records) with daughters Josephine and Florence. I did not find them in 1920, but in 1910 I found the other potential record that I included in the last note. It struck me as conceivable that Joseph married Lizzie Ziegler and then later married Sophie. Sophie is the wife indicated on the WW draft cards, with a July 14, 1882 birth date.

As I thought this through a bit more, I am curious as to how sure you are about the father being Edward. I did do an 1880 Census search for Vanslet, and found a couple of seemingly connected families - Edward Sr and Edward Jr Vancellette in Montague. Edward Jr was married to a Sophie/Sophia/Sophy Tanacour/Francour/Nancour (from viewing birth records of a couple of their children - handwriting is a bit difficult to decipher). This couple also seem to have had a son, Edward Vanslet, in 1892. I'm not sure if they are connected to Joseph Peter, but the name is not too common in the area.
