I'm sure it's probably Mankato. I grew up there. It's just north of
Faribault county in Blue Earth county. North Mankato is just across the
river in Nicollet county.
I'm not sure where you live, but you might try the largest historical
society near you and ask them for advice on newspaper preservation. For
what it's worth, I did a really quick google search and found this
place that does professional preservation and digitizing.

I would be just thrilled to be able to post any scans you could do of
that pre-1900 commeorative newspaper on our genealogy website for
Faribault county. My brother hosts the Blue Earth county website and
I'm sure that he'd be happy to piece together and post the scans of that
oversized paper that you have. It'd be a marvelous Labor Day weekend
project!
