I hope that I am not straying from the list "regs" with this reply.

The Noon Day Gun is still fired every day. As the gun is still owned
by Jardine's, the change of Sovereinty in 1997 had no effect upon
this daily tradition.

Cash-heavy people (locals & tourists) pay for the vicarious thrill
of jerking the lanyard attached to the firing pistol of the gun.

The gun is only fired once per day and, yet, this still brings in a
considerable amount of money to Jardine's - all of which is
donated to charities here.

Best regards,
Iain Rogers, Hong Kong, China
