I am going off the top off my head here so I may
be wrong but I believe that N.C. was a notation
for "non conformist" (ie. a Presbyterian might
have their child baptised in the Church of Ireland
for legal purposes). From what I've seen the
minister was usually blunt about a child out of
wedlock calling it a bastard or illegitimate child;
even naming the father.
