My family came to the US in 1852. This is the story they passed down to
their grandchildren, who passed it down to my generation. Irish immigrant women
in the US were very creative and were able to feed their families on
pennies. When ships left Europe the meat was brined so it would not spoil. When the
ships arrived in New York City, the officers would sell any left over brined
meat at a very low cost. My great grandmother would go to the docks to meet
the ships and get enough to feed her large family. Thus a tradition was born.
