Talk to the librarian at a local library - preferably a library
with old manuscripts. They probably have a suggested local
preservation service.
You probably don't mean to restore the document (like they do to
paintings), but preserve it from further deterioration. This will
probably involve de-acidifying the paper and encapsulating it in a
mylar sleeve.
