The census posted on line by Genealogy.com clearly shows both in the index
and in the census itself that the gentleman was indeed William Hooker. It
does not however, show his status as a Doctor.
As to the entry for the gentleman, Buel Giddings both the Genealogy.com
index and the census itself show that the census taker recorded him as Buel
Gideons, however someone could read "Gideongs"
It is a hard read. There appears to be a tail on the next to the last letter
of the surname.

No accounting for what a census taker wrote - nowhere is there a guarantee
that they were without error, sometimes major, depending upon what
generation of film copy the indexer is using, variations often occur.
I most consistently find that Genealogy.com has the more reliable index and
the most readable images, on line.

No I do not work for them no do any of my kinfolk. Yes, I do have access to
both Genealogy.com and Ancestry.com, and yes, I do tend to cross reference
anything that puzzles me.
