They would appear they have the wrong date, cause that's not what the
Salmon Records show.

Not likely, but possible. Mary Horton married Nov 30, 1682 (Southold
Town Records). His date of birth from the Salmon Death Record is 1707.
If she married as young as age 20 (more likely 25), she would have
been at least 45 by 1707, probably older > so, it is possible. Course,
that should mean the first Nathaniel was dead by then > which I don't
think is documented. Of course, if the Jonathan who married Bethia
Parshall is not documented to Nathaniel, the son, he could have been
from about any of the sons of the first Nathaniel.

That's because she's not in it. The first wife of Caleb Horton, and
the mother of all of his children is UNKNOWN. A Caleb Horton did marry
an Abigail Horton Dec 23, 1696 (Salmon Records), but that Caleb was
almost certainly Caleb-2's nephew, Caleb, son of Jonathan-2. (See
McLaurin, etal for discussions of the legendary fable of the wife of
Caleb Horton being a Hallock.)
