Patchogue was never is Islip Town, but always has been in Brookhaven Town.
You probably have a bit of family mis-information which is common in all
families. Although your grandfather's families lived in Patchogue, it's
quite possible that somewhere along the line they lived in Islip Town & this
fact was forgotten by the family, esp. if their residence in Islip was
brief.
My grandmother's grandparents ALWAYS lived in Cold Spring Harbor. I found
them on the 1850 census living in Manhattan.
My grandmother's sister ALWAYS lived in Northport. I found her & her husband
living on the 1920 census in Brooklyn.
People can show up where you don't expect them. The "they always lived in
XXXXXXX" that we hear in genealogy isn't the case frequently and I think
this is what you most probably have here.
Your family in 1900 seems more like the situations I have in 1850 & 1920,
although Patchogue is a lot closer to Islip than either Cold Spring Harbor
or Northport is to Manhattan and Brooklyn.
