Unfortunately, there were several pages in the 1860 census that were too light to read, including the page that Martin's family would have been on if it was them. I think Martin's father was Robert Gilbert. Here's the census info: what do you think?
1870, Hardin co, Liberty twp, page 418B, 12 Jul 1870:
GILBERT, John, 60, common laborer, born NJ;
Mary Ann, 60, born MD;
Robert, 36, house joiner, born OH;
Isaac, 58, no occupation, idiotic, born NJ;
Eldora, 4, born OH;
Martin, 12, born OH.
This looks like Robert is Martin and Eldora's father, John and Mary Ann are Robert's parents, and Isaac is John's brother. But where is Robert's wife? There was a Robert in the 1860 census, but that's the one I couldn't read. I may be able to look at another microfilm roll this weekend, maybe it's more legible.
1880, Hardin co, Liberty twp, page 139D, 15 Jun 1880:
GILBERT, Robert, 47, laborer, born OH, both parents born OH;
Harriet, 49, disabled with neuralgia, can't read or write, born OH, both parents born VA;
John, 21, farming, born OH;
Martin, 22, farming, married within census year, born OH;
William, 18, born OH;
Daniel, 16, born OH;
Dora, 13, daughter, born OH.
Robert, Martin, and Dora must be the same ones as in 1870. Maybe the other kids were somewhere else with Harriet in 1870. It must be the right Martin, because yours was married in 1879. But where was his wife in this census?
1900, Hardin co, Marion twp, McGuffey, page 273A, June 5-6, 1900:
GILBERT, Robert P., born Oct 1833, age 66, married 35 years, farm laborer, born OH, father born NJ, mother born OH;
Harriet, wife, born Jul 1832, age 67, no children, born OH, both parents born VA;
COMBS, Helen, sister-in-law to Robert, born Jul 1832, age 67, single, born OH, both parents born VA;
COMBS, John, son-in-law, born Jul 1858, age 41, married, farm laborer, born OH, both parents born OH;
GILBERT, Jesse, boarder, born May 1861, age 39, divorced, born OH, both parents born OH.
Robert and Harriet are the same as in 1880, but Harriet is listed as having no children. Helen must be her twin sister, but I don't know if son-in-law is the right relationship for John - looks like he could be Helen's son.
There are other Martin Gilberts in other census records, there is one who lives next to John and Mary Ann in 1870, and is the right age (26) to be Robert's brother - maybe Martin was named after him?
This brings up questions but no definite answers!
