I noticed on the 1851 Cenus names that correspond to the parish registers at Holy Cross and amongst them some of yours. You probably have these already but I will give you the page numbers.

Oxford Township, Grenville page 15
Sarah Matt age 16 Born in French Canada , Roman Catholic, working in the household of John Coleman age 41

North Gower Township Carleton pages 9, 11, 13
Matt, Arcand (written Arcagh), Trembley, Jarbo, all living nearby to each other.
Peter Arcand Sr. Age 72 on page 11
