I had meant to answer this because not long ago I read that someone,
instead of just assuming that the plastic ones are more sanitary, actually
did an experiment with plastic and wooden cutting boards, both kinds
getting different treatments, all the proper control groups and so on, and
so forth, and what they proved, to their own surprise, was that many fewer
harmful germs grew on the wooden ones. They declined to speculate about
why, but maybe your Mom (and mine) was right not to worry about this.
