Dear Cousin Tom in Muncie, IN, and Cousins on the List:
I couldn't find a Wilson for you either in the LDS records I have,
but I did, in checking through the S listings through the W listings I
have, find two CROPPER/ Pennington connections:

From my experience with southern families, they often gave
their children a family name, and often the mother's maiden name.
Your
Wilson may have been "Thomas Wilson Pennington," "William Wilson
Pennington," or some other such combination with Wilson. Were there
any Wilsons listed on the censuses where you found him, particularly
the earliest one? I would check any type of lists I could find for
all the counties where you find him on the census and see if Wilsons
are included on any of those lists -- check marriage lists, church
memberships, etc., etc.
The Genweb is a good place to do this. If you haven't been
there already, check out the county
pages and then the archives, which is searchable.
