I encountered this also, and I think that this was
true, even in the last century. I think that the
organist wrote the entry in the books and then the
priest/pastor signed the record. For all of the
Napoleonic records that I have, the handwriting of the
record and the priest's signature don't match. Often,
the organist was a witness.
The organists also used to raise money by selling
oplatki at Christmas, although in some places the nuns
would raise money doing this.
