Hi Lynn!

Hortulani is from hortulanus, a villager with a house and only a small
garden plot around the house to grow vegetables, but not cropland
outside the village. He would be among the poorer members of the
village.

Cmetos or Cmethonis is a villager with a house and garden plot, and
with a full allotment of cropland outside the village, theoretically
enough to sustain a family. He would be among the more prosperous
villagers.

Nobilis refers to one of the gentry, which can be translated different
ways - count, squire, lord, etc.

These are all Latin terms, the Polish would be zagrodnik, kmiec~, and
szlachta.
