Kuba I do not doubt your translation of the stone.
In fact your translation is helpful.

We have been looking for a surname of Sierockiech to no avail but we will
look for a town now named Sierockiech.

The strange part of her life would be she was buried in a Irish Catholic
cemetery
and only her head stone was in Polish and no other head stones are in
Polish.

It appears the mystery deepens.
