In all the years of looking at many records in Wirsitz Kreis, etc.,
including Nakel, I have never seen a situation where all the surnames
are omitted, as you are suggesting.
I can't put my fingers on exactly where it came up, but I have seen
sometimes that the children have the surname mentioned with their given
name(s), and the parents only have their given names mentioned. Of
course, the more typical situation is where the given names of the
baptized are mentioned with no surname, but then the
parents have both of their surnames (or at least one) mentioned.
The first of the last two situations requires a little more attention
but is manageable to research. (I have access to an earlier Nakel film
and do not recall any problems)
