I have some comments to add:

In the Middle Ages, "real", "original" Latin was already a dead language -
in fact, almost all European languages then spoken can be considered as
different offsprings of Latin, highly modified by time/usage, and by local
influences. Priests, scholars and savants in general used an almost
artificial language, all patched up; if Virgil came back to life he'd have a
hard time trying to understand it.
Roche, like you said, is French for rock; "elle" is a French suffix for
"small" - so rochelle is something like "small rock" - similarly, one of the
Latin words for rock is "rupes" (petra is another one, the origin, for
instance, of the adjective petrified), and "ella" is a Latin suffix for
small - so they just translated little rock in French to little rock in
Latin !
If you look up rupestrine in a large English language dictionary (like my
Webster's with nearly 2,400 pages), you'll find it's an adjective meaning
"found among rocks; living or growing in rocky places" - granted, it's not a
word you use every day ... people would probably be quite surprised if you
showed them the picture you took of a "rupestrine cactus" in Arizona or New
Mexico ...

not a clue. i just know de la argent, translated is of the silver.
but also realise that de la argent could also be shortened, or even
latin. i went nuts looking for de la rupella in the 1200s. they finally
turned up as de la rochelle. de la rupella is latin...and it gets
shortened to de la rupe too...and then there are all the crazy
spellings of rokele rokeley, rokesley and on and on. rochelle is also
roche. the rochelle is prounced row-kell-lee and roche is rock. how
rupella ever became the latin for the name, i've no idea.
