Have you tried the LDS? Thery have an excellent selection of parish records. Some may have to be ordered from Salt Lake but it is a good place to start. Also have you tried going to the website of the Quebec Family History Society - their web address is:
http://www.cam.org/~qfhs./index.html
If you are in the Toronto area, the Canadiana Library on Yonge Street in North York has an excellent collection of materials on Quebec.
