Subject: [Q-R] [OT] Christmas Cookies - Ice Box Cookies
Date: Fri, 28 Nov 2008 17:35:05 -0800 (PST)

This was my grandmother's recipe and I loved making these with my mom when I was younger.  I also used to eat the dough after chilled - probably not a good idea now that we know about the possible ill-effects of raw cookie dough, but it sure is good!  I actually remember liking the dough better than the baked cookies.

Ice Box Cookies

1 cup brown sugar
1 cup white sugar (granulated - not powdered)
1 stick butter
1/2 cup shortening
3 eggs
1 tsp. baking soda in a little hot water
2 tsp. cinnamon
1 cup nuts (or less) (we used either pecans or walnuts in part of the batch) --- OPTIONAL
4 level cups flour

Mix in order given.

Roll in a solid long round piece (we made ours kind of rectangular about 1 inch deep by about 2 inches wide).

Wrap in waxed paper and chill in refrigerator until very cold.

Slice thin (about 1/4 inch slices).

Bake in 425 oven for about 10 minutes.

Enjoy!

Happy Holidays!
