Subject: Which Age to Use?

I need a little advice on which age is the correct one to use. My ggaunt
was born in Ireland around 1835. I have found her in the Brooklyn Census
for 1850 and 1860 and 1900. I also have a copy of her death certificate
and the cemetery record. I have not yet found her in 1870 or 1880. But
her age is different in each one of the documents I have. It is not off
just a year or two but varies as much as 10 years in some places. Is there
any general genealogy rule in a case like this of which age should be
correct or at least entered in the record for her? All comments
