Subject: Conflicting Birth Dates

My great grandparents were born in Hungary, unknown town. I have three conflicting Birthdates for them. One, from the census report (age on last birthday). Two, from their obituaries. Three, from their headstones. There is a five year difference in one case. I have just sent off for their death certificates, and there may be yet a fourth date on there.

How do I correctly deal with this conflicting information? (I am very new to this, and any advice would be greatly appreciated.)
