Hi Anne,
I am guessing that George & Sophia married in Hollington because St Mary
Magdalen was a Catholic Parish and it appears that they were not Catholic.
And also it's a really pretty church :-)
I took a look in several sources for you. In the 1841 census there is a
Henry Brazier also born in Bexhill in 1802 - perhaps a twin? Also living in
Hastings is a Thomas Brazier b. 1793 in Bexhill.
Your Abbet name probably is Abbott with variations of Abbett/& Abbitt, I
found all of them various Sussex sources and Stuberfield appears to be
Stubberfield. The Stubberfield families also lived in Bexhill.
You might also want to contact Ian Brazier who has a site with his father
who is doing a one name study of Brazier,

In www.parishthethought.us/bexBur1.doc there is a list of Burials in Bexhill
from 1799-1837. A number of Braziers are amongst them and also
Stubberfields.
I did look in Pigots 1840 Directory and still living in Hastings were:
Cornelius & John Elphick, Bakers, Robert Brazier a cowkeeper and diaryman,
James Brasier (note the spelling) a Grocer & Cheesemonger, a Sophia Abbott
tea dealer, in in St Leonards a Stephen Stubberfield under grocers & Dealers
in Sundries (& Cheesemaker).
In 1867 Kelly's Directory a Frerick Brazier in Bexhill is shown as a farmer.
If you have Ancestry try searching sometimes on a family name only and a
county and you might pull up others born in the same time period and place,
that is how I found Henry.
I think with some work looking at the sources I have provided you can
probably limit down to a couple of names as to who the father of George was
and his siblings.
And lastly I wondered if you are a member of the Hastings and Rother FHS?
It appears that they have a good library of info.
