I agree that "stood" probably means being a sponsor
at Baptism in a family with Irish roots. However, my
family usually used "stood up" to mean a marriage
witness, so you might consider that. My mother used
this expression in this way, and she grew up in the
house of her Irish grandfather, who came to the States
about 1850.
