Sand Tarts

2 c. butter
2 1/2 cups sugar
2 eggs, well beaten
4 cups sifted flour

1 egg white, slightly beaten
1/2 cup sugar
2 teas. cinnamon

Cream the butter until softened. Add the 2 1/2 cups sugar gradually,
creaming until fluffy. Add the eggs in thirds beating will after each
addition. Add the flour in fourths, mixing until blended after each
addition. Chill dough overnight. Using a small amount of dough at a time,
roll out dough about 1/16th inch thick on a lightly floured surface and cut
into 2 in. rounds. (Star shaped cutters may be used) Brush cookies with
beaten egg white, sprinkle with a mixture of sugar and cinnamon, press a
pecan piece onto center of each cookie, transfer to cookie sheets. Bake at
350* about 9 min.
Makes about 17 1/2 doz. cookies
