Hi Lena...I too, am a diabetic...trying to keep it from getting worse.
Diet is the way to do it, and it is hard, sometime to give up favorite
foods....my first advice...don't prepare a supper like your Me-Mom did.
Butter beans, biscuits, Mac and cheese, corn, and mashed potatoes Five
carbs at the same time, is not good.The green beans are good, you can
have all you want!.I try to eat a small amount of three carb foods, at
the most, at a meal.There is a bread now, on the market that is 7 to 9
carbs a slice.There are also good tasting butter sprays with less, or 0
carbs or bad fats.(Smart Balance is what I use a lot)
You might want to go to www.Diabetes.com and scroll down to get recipes
where you see "Tasty Meals". Also, I don't know where you live, but in
my town, we have a diabetic center...see if there is one, may be listed
under your hospital phone numbers...anyway, they are eager to help, and
have all kinds of information. You learn to bake a lot of apples...and
eat a lot of fresh green veggies.As for the southern recipes...I have
tons..as does other good cooks on this list, did you want veggies,
meats, casseroles, desserts, or anything in particular? I am glad you
