I personally have seen a couple of reasons for this.

I have one grandfather I knew by one name. That was the only name I ever
knew him by. It was not untill many many years after both he and my mother
(his daughter) were both dead, that my uncle told me that it was not even
his name. He had changed it himself, after coming to America. Remember,
people came here for many reasons, some to hide their past. They took such a
compleatly new identity that, even their own decendents know nothing about
this.

Also, since most immagrants did not speak English, and were illiterate even
in their own language, what was written down may or may not be even close to
the correct name. The recorder will just write what sound correct to them at
the time. Therefore, siblings even could end up with different names. That
is why, with another grandfather, I have to look for eight (!) different
names.

I have also seen the family suddenly being listed under the wifes name, not
the father.

It is a challange, but that is part of what makes genealogy fun.
