Definitely watching the election mess - but today, just feasting and being
thankful for a country in which we can watch it.
Part of the cooking here is my Grandmother Mary Katherine Porter Alexander's
Cranberry Conserve recipe, which she learned to make as a child in Paris TN:
1 lb cranberries
1 C water
3/4 C sugar
Grated rind of one orange
1 C pecans, coarsely chopped
1 C peeled seeded grapes
Boil the cranberries and water for 10 minutes in a saucepan. Add the sugar
and simmer 10 more minutes. Add the orange rind, stir and remove from heat.
When cool add the nuts and grapes, mixing gently. Keeps a couple of weeks
if need be. Best made at least 2 days before.
This is a very tart conserve. My father, who otherwise was fine with his
mother-in-law doubles the sugar, but I like her version better. I remember
talking about this dish. The oranges were of course a great treat in the
early part of the century and she was impressed that the recipe let her have
the "meat" for another use. Peeling the grapes was some years a joy,
because we would sit down together as she showed us how - other years she
would grumble through the whole half hour it took, muttering darkly about
patience being for those who did not have arthritis. By the time I knew
her, she and my grandfather were living in Johnson City TN, far from the
glorious pecans of West TN and there was a whole lore of separating the
pecan into those fresh sweet pieces for conserve and the perfect halves for
fudge cake.
