The following is extracted from ONE HUNDRED YEARS OF BREWING, A
SUPPLEMENT TO THE WESTERN BREWER, 1903. Page 211-212
"THE LEMP BREWER, ST. LOUIS
"One of the notable pioneer brewers of this period was J. Adam Lemp,
who, in 1840, established a small brewery on Second street, between
Walnut and Elm streets. The total output of his plan was only about one
hundree barrels per year, the output being designed to supply the local
retail trade. Tje twe;ve-barrel kettle in which Mr. Lemp brewed this
early beer,, as well as the first lager beer of St. Louis, is still
preserved as a curio of the industry, by the son, William J. Lemp, to
whom the business descended. Notwithstanding the modesty and crudeness of
his outfit, however, the senior Lemp made good beer, as he had thorougly
mastered his profession in the Fatherland. His facilities were gradually
increased and a storehouse became necessary, which he shortly afterward
secured by the discovery of a natural cave under the site of the present
plant of the Wm. J. Lemp Brewing Company, on Cherokee street. The founder
of the brewery died on August 25, 1862, the business passing to the son,
Wiliam J. Lemp, as stated. In 1864 the latter removed to the present
location of the plant, which became one of the leading breweries of the
country. Before the introduction of artifical refrigeration there were
four ice-houses on the Levee, each having a capacity of five thousand
tons, and built so as to receive the cargoes of the barges owned by Mr.
Lemp. Under the brewery, at a depth of fifty feet, extended twenty-five
cellars, with a storage capacity of fifty thousand barrels, and the
shipments were made in his own refrigerator cars."
