The -Ste tags are standard tags as provided with TMG.

This is normal. The date shown on the parent's Person View is derived from
the child's Primary Birth Group tag (if any). Even if a child is
adopted, the child's birth date never changes.

Yes it can be done. If it were an adoption case, you probably wouldn't
have to ask and you would have added the ADOPTION tag to the child and
added the adoptive parents as Witnesses. In this case, you can still use
the ADOPTION tag but you will want to adjust the Tag and Witness Sentences
to conform to the situation.
