The census lists those people who are members of the Household which is
the term used.. While he was her child he was not a member of her or
her husbands household. From what you say your gf he was not a member
of the his mother's household, he was a member of his grandmother's
household.
A Household consisted of the Head, perhaps spouse, children,
grandchildren nieces nephews and boarders /roomers, not even related to
the HoH.
