That's fine. I see no problem with what you describe.

You enter the path for Projects on the first tab in Preferences. It's a
program option, not a project option.

Preferences / Project Options / General tab / Default Project Path field

And the field would point to the Projects folder in your TMG data folder in
My Documents.
