I wonder if that will work for Principal and Witness as well? Usually if I
don't want to see them, I just delete them. I mean if I can't see them, I
can't use them right?

From Bob Velke's preview of what "might" be in Version 8 at:

"Specific roles can be disabled/enabled to control whether you'll see
them on the data entry screens."

I suspect this is (will be?) the solution to "not seeing" these default
roles.
