Because PAF is designed around GEDCOM and doesn't do much beyond the
basics (except for LDS Church-specific events and a few other things
included in GEDCOM)

Well it does do basic data fairly well. It also does some other
things - Residence, Census, Occupation, and more. But some of the
other things can surprise you -- often at the wrong time.
