Finding nothing in 1880 Texas, Herschell. However, IF the 1860 Choctaw County, Alabama family is the correct one, I believe this might add some flesh to what you already have.
This family was found in 1850 Choctaw County living with Joseph's apparent parents, Stephen and Catherine Edwards. I didn't transcribe the entire entry, but basically:
Stephen Edwards, age 49; born SC
Catherine, age 50; born GA
Joseph, age 24; born AL
Mary A., age 17; born AL
James F., age 8 months; born AL
If you look closer at the 1860 census enumeration for this family, you will notice that the child you show as F. R. is actually "Joe" - shown as male, but more likely the same as the female Josephine below. Another apparent error made by the census taker was the recording of "S" (Stephen, named for Joseph's father) as a female. The unnamed child at age 3 in 1860 apparently didn't live, as both Esther and George would have been born after the 1860 census and we know that RL in 1860 is the same as Robbert in 1870 and Robert L. in 1890 Ellis County.

George, age 8; born AL
Catherine, age 73; born GA
An index for Choctaw County probate records is online and from that, it appears that Joseph's father, Stephen, died in 1863. Might be a good idea to order those court records because it seems that Joseph was named in the settlement of Stephen's estate. A later entry in the Providence Baptist Church register, also online at the Choctaw County's USGenWeb site, shows "1867-68 - Edwards, Joseph, dead". Because the 1890 Ellis County census states that Mary Ann was the widow of a Confederate veteran, it might be a good idea to also check for and order any probate records for Joseph Edwards who died in Choctaw County ca 1867-8. It may be a bit of trouble and a little expense to get those copies, but you might just find a wealth of information in them, and there may be a mention of his having served in the recent war.

I should have known to include all that we know and some of what we suspect.
Our real problem is
trying to determine what her husband's given name was. According to family
history, he was killed
as a Confederate soldier during the Civil War. We know that her daughter,
Sarah Jane "Sallie" Edwards, married my great grandfather, John Thomas
Spears on 1 February 1881 in Alvarado, Texas.
Sallie was born in Alabama on 14 February 1856 and John Thomas was born 14
October 1847 in Georgia.
In the 1860 census, John Thomas, listed as age 12,and his family was living
in Choctaw Co., Alabama.
We also know that "Sallie's" mother was Mary Ann (Brewster) Edwards, and
that she was born
9 March 1833 and died 22 June 1894, and was buried in Row P-10, Mountain
Peak Cemetery near Midlothian, Texas.
In an old Spears Family History Book, it is stated that "Sallie's" father
was killed while serving with
the Confederate forces during the Civil War, and that his given name is
unknown.
During our search for further information on my great grandmother, just on a
hunch, we checked the
1860 census for Choctaw Co., Alabama looking for Sarah Jane "Sallie"
Edwards' family. We did find
an Edwards family, enumerated on 8 August 1860, listed as follows:

This looks like Sarah Jane's family, with S.J. age 7 being Sarah Jane; and
M.A. age 32, being
Mary Ann. However, the ages does not jibe with dates of birth and date of
enumeration. Some
members of our extended family does not agree that this is definitely our
Sarah Jane and her family.
There is a 1890 census in existence for Ellis County, Texas. This census
lists a Mary Ann Edwards ,
age 56, living in the household of her son, Robert L. Edwards (which could
be the 5 year old boy
listed above).
STILL NO PROOF OF GIVEN NAME OF THE REBEL SOLDIER.
We are searching for a census for 1880 (they were married in Johnson Co.,
in 1881) or in 1870 that
could place more credence on the 1860 census listing for Joseph. Mary Ann
may have been living with
one of her other children, maybe J. Edwards, or F.R. Edwards, or maybe R.L.
