Having been reared in the Southwest, where about one word out of ten is
Spanish in derivation, I believe Barbeque had its origins in Spain:
barbacoa.
It is possible that a food historian for one of the large newspapers--the New
York Times, the Los Angeles Times, etc.--could give your husband some
history. The Oxford Dictionary (the BIG one) might also give some history.

I don't think our English antecedents had much use for the Spanish--remember
Henry VIII and Catherine of Aragon??? She would not give him a son.
