The book called The New Holstein Story by Eugene C. Wulff, gives listings from the 1874 New Holstein Business and Professional Directory, on pp. 22-23.
Among those listings is:
Dr. Ernest Lei Rietz, Physician & Surgeon - Photographer, 1719 Wisconsin Avenue.
Perhaps R. E. Rietz was his son?
Ernest was in New Holstein as early as the 1860 Census as shown by this listing:

Precisely when he began doing photography is not clear. It is likely worth recalling that the Civil War period and soon after saw expansion of photography done by photographers with their large cameras.
Neither Ernest nor R.E Reitz seem to be in the 1893 Patrons Directory for Calumet County, as seen here:

Of course they may not have purchased a listing.
But this New Holstein information certainly confirms that you have some wonderful old photographs.
